After controlled fermentation in an oxygen-free environment, the Caturra cherries are dried with the fruit intact. Expect notes of Angelino plum, red grape and malt, alongside a fermented-fruit character balanced by pronounced acidity. Scoring 87.25 points and from the 2025/26 harvest. Ideal for filter brewing. Available in 250 g bags of freshly roasted whole beans.

This coffee comes from Nariño in southwestern Colombia. Known for its high elevations and cool climate, the region allows coffee cherries to ripen more slowly. This extended maturation contributes to livelier acidity, pronounced aromas and an intense fruit character in the cup. The El Paraíso lot consists of the Caturra variety grown at 1,900 m. Caturra’s clean sweetness combines with Nariño’s bright acidity to create a vibrant and aromatic cup. The coffee is processed using the anaerobic natural method. The cherries undergo controlled fermentation in an oxygen-free environment and are then dried whole, keeping the seeds in contact with the fruit’s natural sugars. This process accentuates the coffee’s red-fruit character, aromatic intensity and sweetness. The influence of this processing method is most apparent in the red grape and Angelino plum notes. Red grape expresses the coffee’s juicy, bright acidity, while Angelino plum brings a deeper, ripe and gently fermented-fruit character. A malt note provides a sweet, warm and complementary finish.
